Berry Adaptogenic Acai Bowl

This acai bowl is one of my go-to breakfast recipes for a weekend treat. Not only is this acai bowl loaded with tons of nutrient dense ingredients, but it’s also super delicious! The acai berry is a small blueberry-esk looking fruit that is native to Central and South America. The acai berry is considered a super-food because it’s extremely high in antioxidants, is great for skin health, helps with cognitive functioning, stimulates healthy digestion, and helps protect against heart disease and diabetes. Acai even contains small amounts of healthy fat – omega 3, 6, & 9! I hope you enjoy this bowl as much as I do.

Ingredients:

1 unsweetened organic acai puree packet (I buy mine at Whole Foods)

¼ cup almond milk (sub nut milk of choice)

½ cup organic frozen blueberries

1 tbsp organic peanut butter (sub nut butter of choice)

1 tsp organic ashwagandha (optional)

1 tbsp organic honey

1 tsp wild bee pollen

¾  cup gluten free granola (my granola contains almonds and coconut)

½ large sliced organic banana

Optional ingredients:

Blend in a scoop of plant-based protein for a protein acai bowl, I like to use Vega’s Mocha flavoured performance protein with this recipe.

Additional toppings: Cacao nibs and/or shredded coconut.

Instructions:

In a blender, blend together almond milk, organic acai puree, frozen organic blueberries, peanut butter until all ingredients are blended together and create a thick consistency. Add more frozen blueberries if it is too watery or add more almond milk if too thick. Pour half of the granola at the bottom of a bowl. Scoop out the acai puree from blender and layer on top of the granola. Top acai blend with granola, sliced banana, wild bee pollen, drizzle with honey and enjoy!
